Sweet Potato Stew

Ready in 1 hour 15 minutes

Serves 4 -6 people

1 large sweet (about 4 cups)

1 cup lentils

2 cups cauliflower rice

1 cup broccoli

1 cup edamame beans

1 package Pine View Farms ground chicken

2 tbsp ghee

1 tbsp soy sauce or coconut aminos

3 cups cashew cream*

3 cups Pine View Farms bone broth

1 tbsp dried onion

1 tbsp garlic powder

1 tsp mustard powder

2 tsp turmeric

1/4 cup nutritional yeast

1 tsp smoked paprika

2 tbsp crunchy peanut butter (optional)

Cayenne (optional)

Fresh or dried chives


  1. In a large pot, heat oil and sear ground chicken, breaking up into small pieces.
  2. Add in diced vegetables and seasoning, sauté for about 10-15 minutes, then add in remaining ingredients and cover. Allow to simmer for a minimum of 1 hour.
  3. Top with fresh herbs, peanut butter and/or avoca.
  4. *To make cashew cream: soak 1 cup cashews overnight, rinse and drain then blend with 3 cups water. Pour into stew.
