Smoky Pork Loin Stew

Ingredients
1 Slow Cooked PVF Pork Loin Roast (shredded)
1 Red pepper
2 large Carrots
3 cobs of Corn
4 cups Cauliflower rice, cooked wild rice or diced potatoes
1 cup Green Peas or Green Beans
2 cups Diced Kale
1 Onion
2 garlic cloves
2 Bay leaf
1 tbsp Coconut aminos
2 liters Bone broth (or ½ water)
1 tsp Allspice
2 tsp paprika
Fresh Parsley
Salt
Pepper
1 tbsp Ghee or butter
Directions
- In a large stock pot, heat ghee or butter to medium, add diced garlic and onion. Sauté until onion is translucent. Add in diced red peppers, peas, corn, chopped carrots, potatoes (if using), cauliflower rice (if using) and sauté for 5 minutes.
- Add in remaining ingredients (except kale, wild rice and herbs if using) Allow to simmer for 45 minutes - 1 hour. In the remaining 10 minutes add in rice, kale and herbs. Enjoy on its own or with corn bread!
