Sausage Scramble

Ready in 30 - 45 minutes

1 ring Pine View Farms Pork Kielbasa Sausage 

1 package Pine View Farms Pepperoni Sticks

1 cup Roasted Sweet potato

8 Eggs

1-2 cups Spinach

1 tbsp Fresh Basil

1 cup Cherry Tomatoes

1 tsp garlic powder

Parmesan Cheese

Olive oil


  1. Preheat oven to 400F.  Peel 1 sweet potato and dice into bite size pieces. Drizzle with olive oil and season with salt and pepper. Bake for 25-30 minutes (until tender) and remove from ov.
  2. In a large pan (cast iron preferred), heat1 tbsp of oil. Dice sausage and pepperoni, adding them to the pan. Sear until browned and remove from pan, transferring to another dish (leave drippings in pan) Add chopped cherry tomatoes to the pan and sear until browned or blistered. Remove from the pan and transfer to a dish with meat (leaving drippings and juices in the pa.
  3. In a dish, scramble eggs and season with garlic powder, salt and pepper, then fry in pan. Once eggs are cooked to your preference, add meat, tomatoes, sweet potatoes and stir in fresh basil and spinach. Sprinkle with Parmesan and enjoy!
