Odd Couple Sausage & Noodles

250 g sliced mushrooms (optional)
2 heads mini bok choy, chopped or 1/2 head regular bok choy, chopped
1 pack Hung's thick egg noodles (from the cooler in the produce section of the grocery store)
3 Tbsp soy sauce
1 Tbsp fish sauce
Sriracha sauce to taste
1. Slice sausage into coin sized rounds and fry in large skillet or wok.
2. Meanwhile, heat noodles according to package instructions (takes 1 minute!) and drain.
3. Add chopped bok choy to skillet and cook 3-5 minutes until just tender.
4. Add noodles to skillet and add soy sauce and fish sauce. Toss to combine. Serve with your favourite condiments on the side.
