Lemon Dill Roasted Potatoes
Ready in 45 minutes to 1 hour

Ingredients
4 cups baby potatoes
1 lemon
1 tbsp ghee
½ tsp Himalayan salt
Black Pepper
Fresh dill
Directions
- Preheat oven (or BBQ) to 375 or 4F. Slice potatoes in half. In a bowl, drizzle potatoes with oil and season with salt, pepper and fresh dill . Squeeze juice of 1 lemon over top and toss. Place in tinfoil and close. Bake in the oven for 45 minutes to1 hour depending until potatoes are fork tender. Enjoy with a protein dish and side salad for a balanced meal.
