Comforting Sausage Bake

Serves 4 people

1 1/4 lb. ripe mixed-colour cherry tomatoes

4 cloves garlic

7 oz. rosemary focaccia (or whatever you have on hand)

1 x 23 oz jar of white beans

12 small pork sausages (Italian, chorizo, breakfast or farmer sausage work great)


  1. Prehat the oven to 350F. Halve the cherry tomatoes, peel and flnely slice the garlic, and tear the bread into bite sized chunks.
  2. Place it all in a 14x12 inch roasting pan. Pour in the beans and their juice, drizzle with 1 Tbsp each of olive oil and red wine vinegar, add a splash of water, and mix it all together.
  3. Cut sausages into chunks (1-2 inch pieces) and randomly dot around your bake, lightly pressing them into the beans and tomatoes.
  4. Roast for 45 minutes or until everything is golden, bubbling and delicious.
