Comforting Sausage Bake

1 1/4 lb. ripe mixed-colour cherry tomatoes
4 cloves garlic
7 oz. rosemary focaccia (or whatever you have on hand)
1 x 23 oz jar of white beans
12 small pork sausages (Italian, chorizo, breakfast or farmer sausage work great)
- Prehat the oven to 350F. Halve the cherry tomatoes, peel and flnely slice the garlic, and tear the bread into bite sized chunks.
- Place it all in a 14x12 inch roasting pan. Pour in the beans and their juice, drizzle with 1 Tbsp each of olive oil and red wine vinegar, add a splash of water, and mix it all together.
- Cut sausages into chunks (1-2 inch pieces) and randomly dot around your bake, lightly pressing them into the beans and tomatoes.
- Roast for 45 minutes or until everything is golden, bubbling and delicious.
