Chorizo Verde Tacos
Ready in 30 minutes
Serves 6-8 people
1 pack Pine View Farms Chorizo Verde Meatballs or Chorizo Verde Sausage
1 pkg Corn or Flour Tortillas 2 ears Corn off the Cob (or corn niblets)
1 pkg Cotija Cheese
2 cups Cumin Lime Slaw
1 cup shredded cabbage (mix of green and red)
1 cup shredded kale
3/4 cup mayo or plain greek yogurt
1/4 cup lime juice
1/2 cup cilantro
1 tsp cumin
1 tsp garlic powder
1/2 tsp salt
1/4 tsp cayenne pepper (or adjust to your person taste)

- Oven Cooking: Preheat oven to 400°.Add 1 pack Chorizo Verde to a bakersheet and cook for 15 to 20 mins or until the meat reaches and internal temperature of 160°
Pan Fry: add thawed meatballs to preheated pan with a little bit of oil and heat until cooked through. Turning once.
- While the meat is cooking assemble your slaw so it has a little time to marinate. Mix your dressing ingredients together first and combine well, then add all dressing and greens to container with lid, shake to combine and put back in refrigerator until use.
- Once your meat is cooked you are ready to assemble you tacos. Fill your preferred tortilla with meat, slaw, cooked corn kernels, top with cheese and enjoy!
