4 bone-in, skin-on Pine View Farms Chicken Thighs

1/3 cup soy sauce (or coconut aminos)

1 tbsp rice vinegar

2 tbsp Sake, Sherry or grape juice

2 tbsp water or bone broth

1 tbsp brown sugar

2 tsp honey (optional)

1 tbsp diced garlic (about 4-6 cloves)

1 bay leaf

Zest of 1 lime

Black Pepper Himalayan Salt

1 tbsp oil


  1. In a pot on the stove top add oil and turn to medium heat. Once oil is hot, add diced garlic and sauté until light brown. Add in chicken thighs and sear each side until browned.
  2. While chicken is searing, in a small pot add soy, vinegar, sake, bone broth, brown sugar, bay leaf, lime zest, black pepper and a sprinkle of salt. Stir until sugar is melted. Add sauce to chicken and cover. Allow to simmer for 45 minutes or until sauce is reduced and sticky. Top with fresh green onions, cilantro, or parsley and enjoy with rice and your favourite sides.
