1 Pine View Farms Pork Leg Roast Boneless

8 cloves of garlic, minced well

1 Tbsp finely chopped fresh rosemary leaves

1 Tbsp finely chopped fresh thyme leaves

1 Tbsp olive oil

Salt and pepper

8 slices Pine View Farms Bacon ( or if you really love bacon, use the whole pack!)

1.5 cups Pine View Farms Chicken Bone Broth

1.5 cups dry white wine (optional)


  1. Blend the garlic, rosemary, thyme and olive oil in a bowl, mixing well.
  2. Sprinkle the roast generously with salt and pepper and place in roasting pan with the fat side up. Spread the herb garlic mixture on top of the roast. Arrange bacon slices on top (you can also put bacon slices underneath the roast if you really love bacon).
  3. Preheat the oven to 375F.
  4. Pour 1/2 cup broth and 1/2 cup wine into the roasting pan. Add more broth and wine to the pan every 20 minutes through roasting.
  5. Roast the pork until a meat thermometer inserted into the center of the meat reaches 145F for medium rare, 160F for well done. Remove from oven and let the roast sit for 10 minutes prior to carving.
  6. Pour the pan drippings into a glass measuring cup and skim off fat that rises to the top.
  7. Serve sliced roast with pan juices on top.
