Sweet Potato Sausage Hash

4 Sweet potatoes (Yam or Japanese)
1 package Pine View Farms Chicken Farmer Sausage
1 package Pine View Farms Ground beef
1 cup Tomatoes (diced)
1 onion (or 1 tbsp onion powder)
1 tbsp Maple
1 tbsp Coconut aminos
1 tbsp Ghee
1 tbsp Garlic Powder
Salt and Pepper to taste
- Preheat the oven to 375F. In a large pan add ghee and heat to medium, add in diced onion and sauté till translucent, then add ground beef and brown.
- Add in finely diced potatoes and sear for about 5 min.
- Chop sausage into desired size pieces and add to the pan along with remaining ingredients and cover for 5 minutes before placing in the oven.
- Bake in oven for 25-30 minutes. Top with fresh herbs, avocado, greens or poached egg.
