Sweet Potato Casserole

Ingredients
3 -4 medium sweet potatoes
1-2 large carrots
1/2 cup plant based milk (or full fat milk)
2 eggs
2-4 tbsp maple syrup
3 tbsp ghee or butter or oil of choice
1 tsp cinnamon
1 tsp onion powder
1 tsp nutmeg or all spice
Salt and Pepper
1/2 cup Pine View Farms' chicken bone broth or beef broth
Maple Beef
1 package Pine View Farms ground beef
1 cup crumbled nuts (pecans, almonds, cashews, macadamia etc)
1-2 tbsp maple syrup
Salt and Pepper
1-2 tsp Cinnamon
1-2 tbsp coconut aminos or soy
1 tbsp ghee, butter or oil
Directions
- Heat oven to 400 Peel sweet potatoes and carrots, and dice into small pieces.
- In a large pan heat 1 tbsp oil, add diced carrots, sweet potato and sear for 5 minutes. Add in bone broth and spices, cover, and allow to simmer until carrots and potatoes are tend.
- Add everything from the pan to a blender along with maple, milk, eggs, oil, and any additional seasonings you desire Blend until smooth and add into a greased casserole dish, bake in oven for 40 minutes.
- For Beef: In a large pan, heat oil. Reduce heat to medium and add ground beef and sear until browned. Add in spices and nuts and allow to sear for another 5-10 minutes. Add maple and soy or coconut aminos and cook for another 2-5 minutes. To finish: In the remaining 15 minutes of baking, add beef and nut topping to casserole. Enjoy hot as a side or as a main dish.
