Sheetpan Sausage Bake

1 package Pine View Farms Pork Breakfast Sausage
2 large sweet potatoes (orange, white or both!) about 6 cups diced
3 cups Brussel Sprouts
2 tbsp Maple Syrup
2 tbsp Oil
Great for breakfast lunch or dinner! One pan meal the whole family can enjoy! Top with a poached egg or enjoy as is!
- Preheat oven to 400F. Dice sweet potato into evenly sized cubes. Slice Brussel sprouts in half removing any browned leaves. In a large bowl, toss sweet potatoes and Brussels in oil, maple, salt and pepper and add to a baking dish or sheet pan lined with parchment paper.
- Slice breakfast sausages into circles and add on top of chopped veggies. Bake in the oven for 20 minutes, mix and bake for another 15-20 minutes (until potatoes are tender and slightly golden) Remove and enjoy!
