Ingredients

1 package Pine View Farms Pork Breakfast Sausage

2 large sweet potatoes (orange, white or both!) about 6 cups diced

3 cups Brussel Sprouts

2 tbsp Maple Syrup

2 tbsp Oil

Salt

Pepper

Directions

Great for breakfast lunch or dinner! One pan meal the whole family can enjoy! Top with a poached egg or enjoy as is!


  1. Preheat oven to 400F. Dice sweet potato into evenly sized cubes. Slice Brussel sprouts in half removing any browned leaves. In a large bowl, toss sweet potatoes and Brussels in oil, maple, salt and pepper and add to a baking dish or sheet pan lined with parchment paper.
  2. Slice breakfast sausages into circles and add on top of chopped veggies. Bake in the oven for 20 minutes, mix and bake for another 15-20 minutes (until potatoes are tender and slightly golden) Remove and enjoy!
