Honey Roasted Paprika Pike

Ingredients
1 tbsp Smoked Paprika
1 tbsp Honey
1 tbsp Oil of choice
Himalayan salt
Salsa Ingredients:
1 Tomato
1 Avocado
1 Mango
¼ cup diced red onion
2 tbsp Beet Sauerkraut
1 cup diced cucumber
Juice of 1
Lime Himalayan Salt + Pepper
Cilantro (or herb of choice)
Directions
- Heat oven to 350F
- Place thawed Pike on a baking sheet lined with parchment paper Sprinkle each side with paprika and season with salt and pepper Drizzle with oil and place in oven Roast first side for 10 min, then flip and add 1 tbsp honey on top of the pike Place back in oven for another 10-15 min.
- Remove from the oven.
- Tip: Spoon oil and honey drippings on top of the fish.
- For the Salsa, Dice cucumber, mango, tomato, red onion and avocado. Then squeeze fresh lime juice and season with salt and pepper. Add sauerkraut and fresh herbs. Stir till combined.
- Enjoy fish on top of lentils or rice and with salsa.
