Ground Chicken Kebabs
Ready in 30 - 45 minutes
Makes 12-16 skewers

Ingredients
2 packages Pine View Farms Ground Chicken
1/4 cup Fresh Basil
1/4-1/2 cup Fresh Parsley
Zest of 1 Lemon
3 grated Garlic cloves
1 tsp onion powder
1/2 - 1 cup Grated Cheese (Parmesan, white cheddar or Monterey Jack etc.)
1 Egg
Salt and Pepper
12-16 Skewers
Creamy Cashew Sauce:
1/2 cup soaked Cashews
1 tbsp Honey
1 tbsp Coconut aminos
1 garlic clove
Juice of 1 lemon
Salt and Pepper
Toppings: Green onion, diced tomatoes and fresh herbs
Directions
- For the skewers: Preheat oven to 425F. In a large bowl, Add thawed ground chicken, fresh diced herbs, grated garlic, lemon zest, shredded cheese, seasoning and egg. Mix till combined Form into shape on each skewer. In a large pan, sear each skewer on all sides then place in the oven on a baking sheet lined with parchment. Bake for 15 minutes. Remove from the oven, drizzle with sauce and top with diced tomatoes and herbs.
- For the sauce: Add all ingredients to the blender and blend until smooth. Enjoy as a dip, drizzle, dressing or spread.
