Greek Meatball Salad

Ingredients
1 package Pine View Farms beef meatballs
Herb and Garlic Goat Feta
1 Red pepper
1 bunch Romaine
1 cucumber
4-5 Potatoes
2 tbsp cooking oil
Salt pepper
Parsley
1 tsp dried oregano
1 lemon (optional)
Creamy Greek Salad Dressing:
1/4 cup red wine vinegar
1/2 cup olive oil
3 tbsp Lemon Juice
1 tsp dried oregano
4 garlic cloves
1/2 tsp Salt
1/4 tsp Pepper
1 tsp honey
1-2 tbsp hemp hearts
(Extra water if needed)
Directions
- For the dressing, add all dressing ingredients to a blender and combine until smooth. Add more water if you would prefer a thinner sauce.
- Preheat oven to 425f. Add meatballs to a baking sheet lined with parchment paper and drizzle with 1 tbsp cooking o. Bake in the oven for 20-25 minutes flipping halfway through. Remove from the oven and toss with some of the Greek dressing.
- Slice potatoes in half and then into wedges, add to a large bowl, drizzle with 1 tbsp oil, juice of 1 lemon, and sprinkle with salt, pepper and dried oregano Bake in oven at 425F for 25-30 minutes.
- To assemble: In a bowl add chopped lettuce, sliced red peppers, sliced cucumbers, roasted potato wedges and Greek meatballs. Sprinkle with feta and fresh parsley if desired and serve with extra dressing on the side!
