Chili Chicken Burger Bowl

Ready in 45 minutes

Makes 4 bowls

4 Pine View Farms chicken burger Patties

4 small sweet potatoes

1 tsp chili powder

1 tsp smoked paprika (optional)

Salt & Pepper

2 limes

1 bunch green leaf lettuce

2 cups spinach

Cherry tomatoes (fresh or roasted)

Avocado Toppings:

fresh herbs, hemp hearts

Avocado pesto:

1 avocado

1 cup basil

1 cup cilantro

Juice of 2 limes (or 1 lemon)

¼ cup olive oil

Optional: ½ cup hemp hearts or ½ cup soaked cashews


  1. Preheat oven to 425F. Slice sweet potatoes into wedges. Add to a large bowl and toss with 1 tbsp oil, juice of 1 lime, chili powder, paprika and season with salt and pepper.  On a baking sheet lined with parchment paper, add wedges and bake for 30 minutes, flip and bake for 15 minutes more (or until desired doneness).
  2.  In a large cast iron pan, or on the barbecue, sear or grill chicken burgers until cooked through. 
  3. For the pesto: Add all ingredients to a blender and combine and desired consistency. To Assemble: Add chopped greens and spinach to a bowl, add fresh or roasted cherry tomatoes, sweet potato wedges, fresh avocado and a chicken burger patty. Top with Avocado pesto and enjoy with a fresh slice of lime for an added zip!
