4 Pine View Farms chicken breasts (or thighs)

1 tbsp ginger grated

4 garlic cloves grated

1 large onion

4 tbsp ghee

4 large tomatoes diced

½- 1 cup chicken bone broth*

1/4-1/2 cup coconut cream

1 tsp Garam Masala

1/2 tsp turmeric

1 tsp coriander

1/4 tsp cardamom

1/4 tsp clove

1/2 tsp cumin

1 tsp chilli powder (optional)

of 1 lemon

Himalayan salt

Cilantro or parsley for garnish


  1. In a large pan heat ghee or butter to medium, add diced onion, grated ginger and garlic to pan. Sauté until caramelized (about 10 minutes). Add in diced tomatoes and spices, sauté for another 10min. Once tomatoes have broken down, add ½ cup chicken broth (or more for a thinner sauce), lemon juice and coconut milk. Blend till smooth.
  2. Preheat oven to 425F. Cube and brown chicken in a pan. Add sauce on top once chicken is browned. Bake in the oven for 30 minutes. Remove from the oven and top with chopped parsley or cilantro. Enjoy with rice, na'an or with your favourite sides.
