Bratwurst Stuffed Double Baked Potatoes

6-8 potatoes (approximately the same size)
1 package Pine View Farms Bratwurst Sausage
2 cloves garlic
½ -1 cup Shredded Cheese
Salt & Pepper
Butter/ oil of your choice
Sweet BBQ sauce (optional)
- Preheat oven to 425F. Using a fork, poke a few holes into each potato. Rip tinfoil in sheets large enough to wrap potatoes individually. Place a potato on a sheet of tin foil, drizzle with oil and sprinkle with salt, wrap completely. Continue until all potatoes are wrapped. Place them in the oven on rack with baking sheet below to catch drips. Depending on the size of potatoes, cooking times will vary. Bake for approximately 45 minutes - 1 hour.
- Remove casings on bratwurst sausage and crumble. Once potatoes are soft, remove from the oven. Allow to cool just enough to handle (can place in the fridge for a few minutes) Slice potatoes in half (length wise), scoop out some of the inner potato and add to a bowl. Mix in sausage and grate fresh garlic. Season with salt and pepper and mix together. (You can add cheese into filling or save for topping). Add filling back into potatoes, place on a baking sheet lined with parchment paper and bake in the oven for another 15 minutes. Topping with cheese in the last 5 minutes. Enjoy with a sweet BBQ sauce or all on their own!
