Beef Barley Soup

Ingredients
1 package Pine View Farms Ground Beef
2 cups chopped mushrooms
1 cup dried barley *
1 onion
3-4 garlic cloves
4 carrots
4 celery stalks
2 L Pine View Farms Bone Broth or homemade
1 tbsp garlic powder
1 tbsp onion powder
1 cup Green Peas
Salt and Pepper
2 Bay Leaves
Fresh Parsley
Directions
- Prep barley by soaking overnight with 2 cups water and 1 tbsp lemon juice (rinse and drain before using)
- Heat oil in a large pot on the stove Add diced onion and garlic, sauté till translucent, then add ground beef and season generously with salt.
- Chop mushrooms, celery and carrots, add to soup with peas and sauté for 5 min before adding in remaining ingredients (for the exception of barley).
- In the remaining 30 min add barley and cover. Simmer until done. Top with fresh parsley Enjoy hot or store in freezer for up to 3 months.
