Asparagus Goat Cheese Stuffed Chicken Breasts

1 package Pine View Farms bacon
1 bunch asparagus
1/3 cup goat cheese
- Preheat oven to 400F. In a hot pan add 1 tbsp ghee, diced onion and sliced (pitted) dates. Turn to medium and sauté until onions are browned.
- In a bowl mix date mixture with goat cheese. Slice chicken breast in half lengthwise making a slit 3/4 of the way through. Flip top of chicken breast open and spread 1 tbsp goat cheese mixture, add three asparagus and close. Sprinkle chicken breast with salt and pepper and wrap with two pieces of bacon. Secure closed with a couple skewers.
- Bake in the oven for 45 minutes to 1 hour until done (juices will run clear when the breast is pierced with a fork). Enjoy!
